East Timor Cooperative Cafe Timor (CCT) is organic, shade grown, and fair trade certified gourmet fresh roasted coffee beans. Timor is a tiny island between Australia and Sulawesi, annexed by Indonesia and liberated in a referendum several years ago. Small scale gourmet coffee bean farming was jump-started before the independence by cooperative farming associations with funding by USAID grants to revitalize the rural economy and give small farmers a cash crop. The cup profile is clean more like a Java coffee bean. The aroma has distinct leather notes, winy fruit, and milk chocolate. In the cup the wine tones deepen and take on an almost smoky edge. With a clean, sweet, and grape-like finish.
